Embracing The Change

Tex-Mex Enchiladas


Yield: 4-6 servings
PREP: 20 minutes
COOK: 30 minutes


1pkg chili mix
2lbs ground beef
2 1/3 cups of cold water
1 8oz can tomato sauce
12 6-inch flour tortillas, warmed
½ lb Velveeta cheese, cubed. (Or Cheddar Cheese)


1. Prepare chili mix as directed on package using ground beef, water and tomato sauce.
2. Place approximately two tablespoons chili on each tortilla and roll tightly
3. Place, seam side down, in 12×8 baking dish and top with remaining chili mix.
4. Cover and bake at 350`F for 25 minutes.
5. Top with cubed cheese and continue baking, uncovered for 5 minutes.
