Embracing The Change



Yield: 2 dozen cookies
PREP: 15 minutes
COOK: 10-12 minutes


2/3 cup sugar + 3 tablespoons sugar,
½ cup (1 stick) butter, softened
1 pkg (3oz) cream cheese, softened
1 2/3 cups all-purpose flour
1 teaspoon vanilla extract
½ teaspoon baking soda
1 cup strawberry cream cheese spread


1. Preheat oven to 375`F. Combine 2/3 cup sugar, butter and plain cream cheese in a medium bowl. Beat with an electric mixer on medium speed until smooth. Add flour, vanilla and baking soda; beat until well combined and a soft dough forms.
2. Shape dough into 24 1-inch balls; place on baking sheets. Flatten balls slightly with bottom of a drinking glass dipped in remaining sugar.
3. Bake cookies until lightly golden around edges, 10-12 minutes.
4. Cool cookies on baking sheets for 1 min. Remove cookies from baking sheets; place on wire racks to cool completely.
5. Spread strawberry cream cheese spread on cookies just before serving.
