Embracing The Change


Back when I was in High School, my mom and I started this Christmas tradition of going to a Madrigal Dinner at the local College every year. The first one was really fun, but each year after, the productions and food started changing and it just wasn’t the same, so we stopped going. But the one thing we always loved while at these dinners, was the drink they served, called Wassail. It’s a type of warm apple cider and it is truly delish! I found a recipe and have been making it every Christmas since.

Yield: 10+ servings
PREP: 35 minutes


1 gallon Apple Cider
1 teaspoon whole cloves
2 teaspoons whole all spice
2 3” cinnamon sticks
2/3 cups sugar
2 oranges studded w/ whole cloves


1. Mix apple cider, cloves, all spice, cinnamon sticks and sugar in a large pot. Bring to boil.
2. Reduce heat and simmer for 20 mins
3. Strain before pouring into serving bowl.
4. Garnish w/studded orange slices.
