ZUCCHINI BREAD

Yield: 2  small loaves
PREP: 15 minutes
COOK: 1 hour

3 eggs, beaten
2 cups sugar
1 cup vegetable oil
2 cups grated unpeeled zucchini
2 cups flour
2 teaspoons vanilla
¼ teaspoon baking powder
2 teaspoon cinnamon
1 teaspoon salt
1 teaspoon soda
1 cup chopped nuts (optional)

1. Beat eggs and add sugar and oil.
2. Mix zucchini in egg mixture.
3. Add all dry ingredients and mix.
4. Add nuts and vanilla then place in lightly greased loaf pan.
5. Bake at 325`F for 1 hour or longer.
6. Let cool 10 mins before removing from pan.
