Tater-Tot Casserole

1 pound ground beef (preferably grass fed) or turkey

¼ cup minced onion

1 cup diced celery

½ tsp salt

¼ tsp fresh ground pepper

1 ½ cups Cream of Mushroom Soup

2 cups grated cheddar cheese

1 pound frozen potato nuggets (“tater tots” – I use Cascadian Farms organic because potatoes are on the “Dirty Dozen” list)



1. Brown the meat, with the onion and celery, in a skillet over medium to medium-high heat.

2. Season with salt and pepper.

3. Stir in the soup.

4. Pour the mixture into the prepared baking dish.

5. Cover with the grated cheese.

6. Top with the potato nuggets.

Bake  at 400º F (200º C) for 40 minutes.
